Here’s a very simple recipe for homemade pasta.   (NB:  the pasta dough is easy to make, but a pasta roller, or pasta attachment on your mixer, will make the whole process much easier)

Pasta

1 cup flour
1 egg
That’s it

Put flour on a plate in a mound.  With a finger (or, for the more fastidious, a spoon or other implement), make a hole in the center of the flour mound so that it looks like a volcano — high on the sides and deep in the center.  Break the egg into the center of the volcano.  With a fork, beat the egg, gradually incorporating flour from the surrounding mound.  Keep pulling in flour from the sides to make dough.  When the dough becomes solid enough not to stick to everything, knead it with your hands until it becomes a bit elastic.   Then run it through your handy dandy pasta roller (or I suppose you could roll it out with a rolling pin, but you’ll want to keep folding it on itself and re-rolling to make many layers of deliciousness, and you will need to roll it very, very thin by the end).  Cut or press into your favorite shape.  If you are stacking fresh pasta, be sure to sprinkle flour or cornmeal liberally between layers so they don’t stick!  Drop into boiling water and cook for maybe 4 minutes.
