Blueberry Pancakes
These are an especial favorite of Sarah’s, and Jen is usually willing to oblige her when she asks for them.
Blueberry Pancakes
1 egg
1 cup flour
3/4 cup milk
1 T sugar
2 tsp vegetable oil
1 T baking powder
1/2 tsp salt
2 tsp grated lemon peel (optional)
1 tsp lemon juice (optional)
1/2 cup blueberries
Beat egg until frothy. Add remaining ingredients other than blueberries; beat until smooth. Fold in blueberries. For each pancake, pour c. 3 T batter onto hot greased or buttered pan or griddle. Cook until puffed and dry around edges. Flip and cook until golden brown.
